Apple ginger mini pies (mini pies de jengibre y canela)

Although I love autumn and winter very much, I am always surprised by the first signs of Spring. Here spring begins on September 21, more than ever the flowers of the trees are like a miracle.  We have had a bad winter, very icy and without rain and this is the worst, the planet really has a problem of climate change in that the seasons are no longer the same.  What will happen to the apricots, peaches and others? Only we have to wait .  In the old times the people of the countryside lived in seasonal changes, the summers, and then the autumn in which the nature rests and then the winter in which we need the rain, and all begin again. Tomato cherry and herb puff tarts (Tartas de tomate cherry y albahaca en masa de hoja)

Finally I am here to finish  the post of these Tomato cherry and basil little tarts. This month has been crazy and sometimes a mess  with my appointments to the kinesiologist and everything else, Im going three times a week. But the truth is never very quiet around here. This recipe is vegetarian and we all loved it, the good thing is with puff pastry and they are made fast, you can vary the fillings but I had the tomatoes because suddenly I crave a recipe and so it was with this one. I made this recipe in these smaller rectangular molds but it can be done in round or one long one, that is the one you have on hand or you like more. Take advantage that in many places it is still summer and you can get beautiful tomatoes and basil. In any case, here in Chile, cherry tomatoes are usually found year-round. Figs and frangipane little tarts (tartas de higos y crema de almendras)

Here we are at that time when summer ends and autumn begin (really my favorite) and the favorite fruit at this time are: figs. I love them.  Honestly I bought figs  several times until I could leave some to make the recipe.  In any case it can be prepared with other fruits ( Blueberries, strawberries, raspberries ), o nly I love figs and the season is so short Is a small tartlet with a frangipane cream and figs. Pears and almonds tart (Tarta de peras y almendras)

The  tree has given many pears this year (each summer is different) the same with the apples (delicious Fuji) so now is season pears here! I think that in the northern hemisphere they must still have pears, we have almost all year round. We love this recipe with a soft sponge cake, almond cream and pears. Delicious.  Always I think   zucchinis are absolutely impressive, you can use them salty or sweet, for quiches, for stews, for soups (are more creamy)  and fortunately I have access almost all year round,  being summer the best time of course. And if you are in summer the tomatoes are wonderful in this time. This simple tart  of zucchinis and tomatoes is delicious and really easy. Original Viennese Applestrudel (Strudel de manzanas)

Many days ago I have the recipe and the photos ready but it was enough that I sit on the computer and began to stiffen and cough. I have a terrible cold. But I found that  spent a lot of time. So here's the recipe: Apple strudel, I love everything with apples and I've made applestrudel  several recipes but I love this. The dough is so good that it was almost so much I rolled  (a very thin dough), but the second time I was more careful. I hope to make other strudel  with cherries soon . Stone fruit Galette (peaches ) (Galette de duraznos)

As we are here at the end of the summer it is easy to find fruits of the season at a very good price, so Gerardo now arrived with a box of peaches. Thank God it's a good kind of peaches that does not mature so quickly. In any case I put them all in the refrigerator and made this galette of peaches. This recipe gives the dough for two galette (I put a dough in the refrigerator for a while) and you can use a mixture of peaches and plums  but I really loved it with peaches and the crust is wonderful It is not complicated to do. One of my favorites fruits in summer are apricots. These are really the last apricots of this difficult and hot summer. The apricots season is short and this year we ate a lot of au naturel and  only made apricot jam  for the winter. And  this is  the first and only apricot's tart I made this season. This tart  can be done with natural or canned apricots.
